Ingredients

For the Shrimp:

  • 500g shrimp (peeled and deveined)
  • 1 tsp salt
  • 1 tsp paprika powder
  • ½ tsp chili powder
  • 2 tbsp butter

For the Tomato-Basil Sauce:

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 200g cherry tomatoes, halved
  • 2 tbsp tomato puree
  • 1 tsp paprika powder
  • 1 tsp dried basil (or 1 tbsp fresh basil, chopped)
  • ¼ tsp salt
  • 2 tbsp water

For Garnish & Wraps:

  • 4 large tortillas or wraps
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges (optional)

Instructions

Prepare the Shrimp

  • In a bowl, combine shrimp with salt, paprika powder, and chili powder. Toss to coat evenly.
  • Heat butter in a skillet over medium heat. Add shrimp and cook for 2–3 minutes on each side until pink and cooked through. Remove and set aside.

Make the Tomato-Basil Sauce

  • Heat olive oil in the same skillet over medium heat. Sauté onion for 3–4 minutes until softened.
  • Add garlic and cook for 1 minute until fragrant.
  • Stir in cherry tomatoes and cook until softened, about 5 minutes. Mash slightly with a spoon.
  • Add tomato puree, paprika powder, dried basil, salt, and water. Simmer for 3 minutes until the sauce thickens.

Assemble the Wraps

  • Warm tortillas in a dry skillet or microwave.
  • Spread a layer of tomato-basil sauce on each tortilla.
  • Top with cooked shrimp and sprinkle fresh parsley.
  • Roll tightly, tucking in the edges, and slice in half.

Serve

  • Arrange wraps on a platter and serve with lemon wedges for an extra tangy kick.
