Velvety Pistachio Basil Pasta

Ingredients

  • 250g pasta (spaghetti, linguine, or your favorite kind)
  • 1 handful of fresh basil leaves
  • 80g pistachios, shelled
  • 2 tablespoons olive oil
  • 50g Parmesan cheese, grated
  • 2 garlic cloves, minced
  • 1 lemon, juiced and zested
  • Salt and pepper, to taste
  • 1-2 burrata balls
  • 1 pinch of chili flakes (optional)
  • 1/2 cup pasta water

Instructions

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package instructions. Reserve ½ cup of pasta water before draining.

Prepare the Pistachio Basil Sauce:

  • In a food processor or mortar and pestle, combine the basil, pistachios, Parmesan, garlic, olive oil, lemon juice, and zest. Blend until smooth, adding a tablespoon of pasta water at a time to achieve a creamy consistency. Season with salt and pepper to taste.

Combine the Sauce with Pasta:

  • Return the drained pasta to the pot. Add the pistachio basil sauce and a splash of pasta water. Toss until the pasta is evenly coated and silky.

Plating:

  • Divide the pasta among serving plates. Top with a generous piece of burrata, a sprinkle of chili flakes, and additional basil leaves for garnish.

  • Serve immediately and enjoy the creamy, nutty, and slightly spicy flavors!

Notes

  • Nuts: Substitute pistachios with almonds or walnuts for a different nutty flavor.
