Roasted Garlic Mashed Potatoes

Ingredients

  • 3 lbs russet or Yukon gold potatoes, peeled and cubed
  • 1 bulb garlic, roasted (instructions below)
  • 1 cup heavy cream (or milk for a lighter option)
  • 1/2 cup unsalted butter, softened
  • 1/4 cup grated Parmesan cheese
  • 1 sprig fresh rosemary (or 1 tsp dried rosemary)
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tbsp olive oil (for roasting garlic)
  • Optional garnish: Fresh parsley or chives, finely chopped

Instructions

Roast the Garlic

  1. Preheat your oven to 400°F (200°C).
  2. Slice off the top of the garlic bulb, exposing the cloves. Drizzle with olive oil, wrap in foil, and roast for 40 minutes until soft and caramelized.

Prepare the Potatoes

  1. While the garlic roasts, peel and cube the potatoes.
  2. Place them in a large pot and cover with cold water. Add a generous pinch of salt.
  3. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender.

Infuse the Heavy Cream

  1. In a small saucepan, warm the heavy cream or milk over low heat.
  2. Add the sprig of rosemary and grated Parmesan cheese. Let it gently simmer for 5-7 minutes to infuse the flavors, stirring occasionally. Remove the rosemary before adding the mixture to the potatoes.

Mash the Potatoes

  1. Drain the cooked potatoes and return them to the pot.
  2. Add the softened butter, infused cream, and roasted garlic (squeezed from its skin).
  3. Use a potato masher or hand mixer to blend until smooth and creamy.

Season and Serve

  1. Season with salt and freshly ground black pepper to taste.
  2. Garnish with parsley or chives and serve hot!

Notes

  • Cheesy Boost: Add extra Parmesan or substitute with Gruyère for a nuttier flavor.
  • Herbal Notes: Experiment with thyme or sage for a different aromatic profile.
  • Light Version: Replace heavy cream with almond or oat milk for a lighter dish.
