Ingredients

  • Raw cashews (1 cup, soaked overnight)
  • Pumpkin seeds (2 tbsp)
  • Extra virgin olive oil (2 tbsp)
  • Water (½ cup, adjust for desired consistency)

Instructions

Soak the Cashews:

  • Place cashews in a bowl and cover with water. Let them soak for at least 6 hours or overnight to soften.

Blend the Ingredients:

  • Drain the soaked cashews and rinse them.
  • Add the cashews, pumpkin seeds, olive oil, and ½ cup of water to a blender or food processor.

Blend Until Smooth:

  • Blend on high speed until the mixture becomes creamy and smooth. Add more water, a tablespoon at a time, if a thinner consistency is desired.

Season and Adjust (Optional):
