Ingredients
For the Marinade:
2 tbsp olive oil
½ cup chicken broth
1 lemon, juiced
3 tbsp garlic, minced
1 tsp dried oregano
2 tsp Italian seasoning
1 tsp Badia Complete Seasoning
¼ tsp black pepper
⅛ tsp smoked paprika (optional)
For the Chicken:
1 whole chicken (about 4 lbs), spatchcocked or cut into pieces
1 lemon, sliced (for roasting)
Fresh rosemary or parsley (for garnish)
Instructions
Prepare the Marinade
- In a small bowl, combine olive oil, chicken broth, lemon juice, minced garlic, dried oregano, Italian seasoning, Badia Complete Seasoning, black pepper, and smoked paprika. Whisk until well blended.
Marinate the Chicken
- Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated.
- Cover and refrigerate for at least 30 minutes (or up to 8 hours for deeper flavor).
Preheat and Prepare
- Preheat your oven to 425°F (220°C).
- Arrange the marinated chicken on a baking sheet or roasting pan, skin side up. Add lemon slices around the chicken for extra flavor.
Roast the Chicken
- Place the pan in the preheated oven and roast for 35–45 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (75°C).
- Baste the chicken with the pan juices halfway through cooking to keep it moist.
Rest and Serve
- Remove the chicken from the oven and let it rest for 10 minutes before serving.
- Garnish with fresh rosemary or parsley and serve with roasted vegetables or a side of your choice.
Notes
- Customizable Herbs: Add thyme, basil, or dill for a personalized touch.
- Smoky Variation: Increase the smoked paprika for a bolder, smoky flavor.
- Meal Prep Friendly: Marinate the chicken overnight for convenience and richer flavor.
- Serving Suggestion: Pair with garlic mashed potatoes, a fresh green salad, or crusty bread.
