Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium tomato, sliced
  • 1 small onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 cups fresh spinach leaves
  • 1/4 cup crumbled feta cheese
  • 4 large eggs
  • Salt to taste

Instructions

  1. Heat olive oil and butter in a non-stick skillet over medium heat.
  2. Add sliced onion and garlic, sauté until fragrant and lightly golden.
  3. Toss in the tomato slices and cook for 2-3 minutes until softened.
  4. Add spinach leaves, stirring gently until wilted.
  5. Create small wells in the mixture and crack the eggs into them.
  6. Sprinkle crumbled feta over the dish and season with salt.
  7. Cover and cook for 3-5 minutes, or until eggs are cooked to your liking.
  8. Serve immediately with crusty bread or a side of avocado for a complete meal.
