Ingredients

  • For the Dumplings:

150g Shrimp, finely chopped 3 tbsp chives, finely chopped 1/2 garlic clove, minced Small knob of ginger, minced 1 tsp sesame oil 1 tsp soy sauce 1 tsp cornflour Pinch of salt & pepper  

  • For Wrapping and Cooking:

3 rice paper sheets Olive oil (for frying)

Instructions

Prepare the Filling:

  1. In a mixing bowl, combine finely chopped shrimp, chives, garlic, ginger, sesame oil, soy sauce, cornflour, and a pinch of salt and pepper.
  2. Mix thoroughly until all ingredients are evenly incorporated. Set aside.

  Prepare the Rice Paper Wrappers:

  1. Fill a shallow plate with warm water.
  2. Cut each rice paper sheet in half, creating six pieces.
  3. Dip one piece of rice paper into the warm water for 5–10 seconds until pliable. Lay it flat on a clean surface.

  Assemble the Dumplings:

  1. Place about 1 tablespoon of the prawn filling in the center of the softened rice paper.
  2. Fold the edges over the filling, creating a small rectangular or round packet. Repeat with the remaining rice paper and filling.

  Cook the Dumplings:

  1. Heat a non-stick frying pan over medium heat and drizzle with olive oil.
  2. Place the dumplings seam-side down in the pan and cook for 2–3 minutes on each side, or until golden and crispy.
  3. Remove from heat and transfer to a plate lined with paper towels to drain excess oil.

  Serve:

  • Arrange the dumplings on a serving platter. For an extra touch, garnish with sesame seeds or chopped chives. Serve with soy sauce or a spicy dipping sauce on the side.
