Ingredients

  • 2 cups raw almonds
  • 2 tablespoons honey (to taste)
  • Optional: A pinch of sea salt

Instructions

Roast the Almonds

  1. Preheat your oven to 350°F (175°C).
  2. Spread the almonds in a single layer on a baking sheet.
  3. Roast for 10–12 minutes, stirring halfway through for even roasting. Roasting enhances the flavor and helps the almonds release their natural oils.

  Cool the Almonds:

  1. Let the almonds cool slightly after roasting to avoid overheating your blender or food processor.

  Blend the Almonds

  1. Place the almonds in a high-speed blender or food processor. Start blending on low, gradually increasing the speed.
  2. Blend for 8–10 minutes, pausing occasionally to scrape down the sides. At first, the almonds will form a crumbly texture, then a paste, and eventually a creamy butter.

  Add Honey and Salt

  1. Once the almond butter is smooth, add 1–2 tablespoons of honey (adjust based on your sweetness preference) and a pinch of sea salt if desired. Blend again to ensure the honey is fully incorporated.

  Adjust Consistency (Optional)

  • If the almond butter is too thick, add a teaspoon of neutral oil (like avocado or coconut oil) and blend until you achieve your desired consistency.

  Store the Almond Butter

  • Transfer the almond butter to an airtight glass jar. Store at room temperature for up to 2 weeks or refrigerate for longer freshness.
