Ingredients

  • 2 medium yellow onions, thinly sliced and caramelized
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • ⅓ cup mayonnaise
  • 2 Tbsp fresh chives, finely chopped
  • Salt and pepper, to taste

 

Instructions

Caramelize the Onions

  1. Heat a skillet over low-medium heat. Add 1 tablespoon butter and 1 tablespoon olive oil.
  2. Once the butter melts, add the thinly sliced onions. Sprinkle a pinch of salt to draw out moisture.
  3. Stir occasionally, cooking for 30–45 minutes, until the onions are golden brown and deeply caramelized. Be patient—the slow cooking is key!
  4. Remove from heat and allow the onions to cool completely.

Prepare the Creamy Base

  1. In a medium mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.

Combine Ingredients

  1. Chop the cooled caramelized onions into smaller pieces if desired, then fold them into the creamy mixture.
  2. Stir in 2 tablespoons of fresh chives. Adjust seasoning with salt and pepper.

Chill the Dip

  • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
