Ingredients

  • 100ml extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 2 tbsp dried cranberries, roughly chopped
  • 2 tbsp walnuts or pecans, roughly chopped
  • ½ tbsp fresh rosemary, finely chopped
  • ½ tbsp fresh thyme, finely chopped
  • Zest of ½ orange

Instructions

Prepare the Ingredients:

  • Chop the cranberries and walnuts (or pecans) into small, even pieces.
  • Finely chop the fresh rosemary and thyme.
  • Zest half an orange, ensuring you avoid the bitter white pith.

Combine the Base:

  • In a small serving dish or bowl, pour the extra virgin olive oil.
  • Stir in the white wine vinegar for a tangy balance.

Add Flavors:

  • Sprinkle in the chopped cranberries, nuts, rosemary, and thyme.
  • Stir gently to distribute the ingredients evenly.

Finish with Citrus:

  • Grate the orange zest over the mixture for a bright, fragrant finish.

Serve:

  • Place the dipping oil in the center of the table with a platter of fresh bread (like sourdough, baguette, or focaccia) and enjoy!

Notes

  • Spice It Up: Add a pinch of red chili flakes for a spicy kick.
  • Cheese Pairing: Serve with a side of Parmesan or goat cheese for an extra indulgence.
  • Alternative Nuts: Substitute walnuts with pistachios or almonds for a unique flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving.
