Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 400g mushrooms, sliced (button, cremini, or a mix)
  • 1 onion, thinly sliced
  • 1 red pepper, finely diced
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • ½ tsp chili flakes (adjust for spice preference)
  • 1 tbsp fresh parsley, chopped
  • Yogurt Herb Sauce

Instructions

Sauté the Onions & Peppers

  • Heat a large skillet over medium heat and add olive oil and butter.
  • Once the butter melts, add the sliced onions and diced red pepper.
  • Cook, stirring occasionally, until the onions turn golden and caramelized (about 15 minutes).

Cook the Mushrooms

  • Add the sliced mushrooms to the skillet. Let them cook undisturbed for 3–4 minutes to allow them to brown.
  • Stir occasionally and cook for another 7–10 minutes until they release moisture and turn deep golden brown.

Add Flavor Enhancers

  • Stir in the minced garlic, chili flakes, salt, and black pepper. Cook for 1–2 minutes until fragrant.
  • Sprinkle in fresh parsley, stir, and remove from heat.

Serve & Enjoy!
